i really believe that eating with the seasons helps boost our bodies and our mental health.
i believe that food should be our primary source of healing; as somebody who has struggled with anxiety and depression and been handed pills to treat this, i have found that my diet and lifestyle have far more of an impact on my emotional and physical well-being. balance is key in every aspect of our lives and food is certainly no exception. summer is well on its way and our bodies can feel it; the humidity and warmer air make us crave lighter meals, so we must honor this in a way that can keep us well-nourished throughout the day.
so for today i am honoring spring and the upcoming summer weather through this really delicious and nutritious (simple) green smoothie, that’s sure to give you a boost!
springy, summery green smoothie (vegan + gluten free)
- 1 medium ripe banana
- ~ 1c cubed water melon
- ~ 1c baby spinach leaves
- 1/2c unsweetened almond milk
- 1/2c unsweetened coconut milk
- 1 tbsp hemp hearts (chia seeds would of course work too)
- a few ice cubes
This smoothie provides roughly 260 calories (depending on the size and ripeness of your banana, and the brands of almond/coconut milk you use), is quite high in dietary fiber, rich in potassium, vitamin C, A, and B6. The hemp hearts add a nice boost of protein. The lycopene content in the watermelon acts as a powerful anti-oxidant and the raw spinach leaves promote healthy skin and digestion.
* This makes 1 healthy portion if subbing for a meal. If you’re treating this as an addition to a meal, it would be about two servings.
